Yummy Vegan Pancakes, Baby!

It’s been awhile since I’ve blogged so I thought let’s start with some good old pancakes (pancakes, broccoli and mashed potatoes are my favourite foods – though not together!)

I love pancakes, with lots of different fillings, my favourite is melted chocolate and banana, with a splash of lemon. Pancakes are actually so easy to make, you just need a decent frying pan, I use a frying pan/wok type thing. It’s quite big, I prefer bigger pancakes as you can put more stuff into them and they look great when you roll them up.
Fillings:

Lots of different things dependent on what you like to eat. Here are my favourites, vegan of course, though you can add anything really as long as it will roll with the pancake : )

  • Lemon, chocolate and banana
  • Ratatouille, rice and beans
  • Tofu, steamed veggies, buckwheat and pesto
  • Ice cream, raspberries and some agave syrup (messy but wonderful)
  • Frozen berries (warmed up so they are a pulpy goo)

Vernal/Spring Equinox

I’m sat here with lots of whirling thoughts in my head.. The moon is in Cancer today conjunct my Jupiter in my third house. (any astrology buffs out there know what that means) In plainer terms it means I’m moved to communicate (commune) deeply (Cancer is a water sign associated with feelings). The conjunction of Jupiter only heightens those feelings and expands them. The third house is to do with your local environment and communication. It’s easy for me to write stuff so all this blogging I do comes pretty naturally for me. I work in fits and starts and always on inspiration. I prefer not to force it as it just doesn’t feel good.

The name Easter is derived from the Saxon Eostre (Eastre) The Ancient Saxons in Northern Europe worshipped the Goddess Osetre at the time of The Spring Equinox. The Goddess represents the sunrise, Spring-time fertility and the renewal of life.

Paddington, Soul Journeys and Good Cappuccino

Sitting here with Paddington Bear at Paddington Station in London I’ve always had a fascination for trains and stations. My favourite station is Paddington. I love the architecture, the expanse of the place and the ambient yet buzzy vibe the place has.
I love watching all the people, busily going from A to B, stopping along the way for a coffee and a bite to eat.I’ve spent the last four days in London, sitting in cafes just relaxing the afternoons away drinking lots of coffee (I love soya cappuccinos), eating vegan cupcakes, wandering around, going to galleries, on an Access Consciousness bars course – (see this post about that) and generally having a little holiday.

Dinner for friends

This post is all about simple good food, it’s not that difficult to make I’ve included instructions and pictures.
There’s a Leek and Carrot Flan, Popcorn, Banana & Chocolate Cake and a Lemon Cheesecake

I love making flans… I’d bake them all the time if I could :)here’s a Leek and Carrot Flan I have also made a Carrot and Tofu Flan see this recipe

I followed a recipe from The Vegan Cookbook (and here is the updated version of the book), but as usual I’ve messed with the recipe again as that’s only for the Carrot Flan and I LOVE leeks with a passion!

Simple Good Food ~ Part 1

KitchenI love to cook though I have been busy with other things. I have felt inspired of late and have a little more time to cook so here are my efforts. Any decent cook will tell you that having good equipment does help a lot, I don’t need that much, but decent flan dishes, bowls to mix ingredients some good scales, a liquidiser and a blender all help make cooking a meal a lot easier.

Lunch and snacks on any given weekend

Pitta bread– stuffed with fillings

Toast some pitta breads in a toaster my favourite ones are:

Spreads for pittas: Vegan cream cheese, pâté, houmous, egg free mayo
Veggies to add: salad (rocket, watercress, spinach, lettuce) tomatoes, peppers, onion, beetroot, avocado, leeks, onions
Seeds: Roasted Tamari seeds, sunflower, sesame and cashews
Other Ingredients: cooked/tamari tofu, veggie burgers/sausages

Vegan Cake,Truffles and Trifle – Yummy

Since I’ve been here in Scotland here with my dear Sister, she baked me a cake when I arrived ( the banana and date one), it was so nice ( we ate it with cups of tea and with help from my dad), so she baked another one this morning, we’ve had a morning & afternoon just baking, and listening to my loved tracks on last fm it’s been great as I’m on holiday here for a while and I so need a holiday.

We’ve made a trifle, rum truffles and the banana and date cake

Sofas and Smoothies

Well,

I was writing a completely different post earlier and this kinda just popped into being all by itself
So this one is first, as it’s about home comforts and food.
Being the Taurean lady that I am; a comfy sofa is the ultimate in pleasure for me 😀

My other sofa – bless, is looking a little tired and it just wasn’t long enough (it’s an important consideration as I have long legs), even though I have fallen asleep on it a million times and squished too many people on it!
It was time for a change

So it comes to the time when a new sofa is to be acquired, luck would have it that my sister was selling hers and I said to her first dibs on it.

It was my birthday last month and my dear dad helped by getting it shipped down to me (we live 300 miles apart)

So after scrubbing the floor and moving the other sofa (might put it in my therapy room, need to measure it to see if it fits first) I haven’t contemplated how I’m going to get the other sofa up the stairs…. eeek

Home Cooked Food

Yum

I love to cook, bake etc see this, though I don’t have a lot of time and I get tired as I’m quite busy so when I do have the energy and inclination I really enjoy it.

I’ve met a lot of people who were astounded that for instance I would consider making my own white sauce for a lasagna. I like making things from scratch , I’m not averse to using cooking sauces, frozen fruit or tinned beans to save some time (no point slaving over a cooker for 3 hours for beans)

I enjoy the preparation and the process, since I’ve got a squeezebox boom in my kitchen now, I love to listen to music and cook, especially last night I cooked a carrot and tofu flan from scratch, I love making pastry, it’s so easy and you can put different flours in for different flavours.

I followed a recipe from The Vegan Cookbook (and here is the updated version of the book), my copy is rather battered from overuse, well I have had it since 1986!
