Dinner for friends
This post is all about simple good food, it’s not that difficult to make I’ve included instructions and pictures.
There’s a Leek and Carrot Flan, Popcorn, Banana & Chocolate Cake and a Lemon Cheesecake

I followed a recipe from The Vegan Cookbook (and here is the updated version of the book), but as usual I’ve messed with the recipe again as that’s only for the Carrot Flan and I LOVE leeks with a passion!
I love to cook though I have been busy with other things. I have felt inspired of late and have a little more time to cook so here are my efforts. Any decent cook will tell you that having good equipment does help a lot, I don’t need that much, but decent flan dishes, bowls to mix ingredients some good scales, a liquidiser and a blender all help make cooking a meal a lot easier.
Lunch and snacks on any given weekend
Pitta bread– stuffed with fillings
Toast some pitta breads in a toaster my favourite ones are:
Spreads for pittas: Vegan cream cheese, pâté, houmous, egg free mayo
Veggies to add: salad (rocket, watercress, spinach, lettuce) tomatoes, peppers, onion, beetroot, avocado, leeks, onions
Seeds: Roasted Tamari seeds, sunflower, sesame and cashews
Other Ingredients: cooked/tamari tofu, veggie burgers/sausages
Some simple ingredients: broccoli, pumpkin seeds, tofu, onions, peppers and a leek
Since I’ve been here in Scotland here with my dear Sister, she baked me a cake when I arrived ( the banana and date one), it was so nice ( we ate it with cups of tea and with help from my dad), so she baked another one this morning, we’ve had a morning & afternoon just baking, and listening to my loved tracks on last fm it’s been great as I’m on holiday here for a while and I so need a holiday.

Banana and Date Cake
This is so easy to make, my sister has a small baby (24 weeks old) and she can make it in between feeds.
I love to cook, bake etc see this, though I don’t have a lot of time and I get tired as I’m quite busy so when I do have the energy and inclination I really enjoy it.
I’ve met a lot of people who were astounded that for instance I would consider making my own white sauce for a lasagna. I like making things from scratch , I’m not averse to using cooking sauces, frozen fruit or tinned beans to save some time (no point slaving over a cooker for 3 hours for beans)
I enjoy the preparation and the process, since I’ve got a squeezebox boom in my kitchen now, I love to listen to music and cook, especially last night I cooked a carrot and tofu flan from scratch, I love making pastry, it’s so easy and you can put different flours in for different flavours.
I followed a recipe from The Vegan Cookbook (and here is the updated version of the book), my copy is rather battered from overuse, well I have had it since 1986!

I’m officially a night owl
It doesn’t matter what I do I lie in bed wide awake, I used to sleep so well too, maybe I need some company hmmmm…. or just a few cupcakes?
